Fruit Turkey Kabobs
|Boneless cooked turkey roast||3⁄4 Pound, cut in twelve 1-inch cubes|
|Orange||1 , cut into wedges|
|Pear||1 , cut into wedges|
|Green pepper||1 , cut in squares|
|Spiced crab apples||4 Small|
|Jellied cranberry sauce||1⁄2 Cup (8 tbs)|
|Apricot preserves||1⁄2 Cup (8 tbs)|
|Light corn syrup||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Ground cloves||1 Dash|
Thread pieces of turkey, orange, pear, green pepper, and a crab apple onto four 10-inch skewers.
In saucepan combine cranberry sauce, apricot preserves, corn syrup, lemon juice, butter, cinnamon, and cloves; bring to boiling, stirring occasionally.
Brush cranberry mixture over turkey and fruit.
Grill about 4 inches above medium-hot coals till meat and fruit are hot and well glazed, 5 to 10 minutes.
Turn and brush occasionally with sauce.
Pass remaining sauce.
