Coconut Orange Cookies

Ingredients
  All purpose flour 1 3⁄4 Cup (28 tbs)
  Baking soda 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Margarine 1⁄2 Cup (8 tbs)
  Granulated sugar replacement 2⁄3 Cup (10.67 tbs)
  Granulated fructose 2 Teaspoon
  Egg 1
  Orange rind 1⁄2 Teaspoon, grated
  Grated lemon rind 1⁄2 Teaspoon
  Orange juice 1⁄4 Cup (4 tbs)
  Lemon juice 1 Teaspoon
  Flaked unsweetened coconut 1⁄2 Cup (8 tbs)
Directions

Sift together flour, baking soda, and salt.
Set aside.
Using an electric mixer, cream margarine, sugar replacement, and fructose.
Beat in egg and grated orange and lemon rinds.
Beat in dry ingredients alternately with juices. (Beat well after each addition.) Stir in coconut.
Drop mixture onto greased cookie sheet.
Bake at 350°F (175°C) for 12 to 14 minutes or until edges begin to lightly brown.
Move cookies to cooling racks.
