Garlic With Fruit
|Garlic||5 Clove (25 gm), minced|
|Slivered blanched almonds||1⁄3 Cup (5.33 tbs)|
|White bread slice||3 , crusts removed and diced|
|Olive oil||2 1⁄2 Tablespoon|
|Chicken stock/Veal stock||3 1⁄2 Cup (56 tbs)|
|White pepper||1⁄8 Teaspoon|
|Dry white wine||2 Tablespoon|
|Cantaloupe/Crenshaw / honeydew melon balls||1⁄2 Cup (8 tbs), chilled|
|Seedless white grapes||1 Bunch (100 gm), chilled|
|Prosciutto ham||1⁄4 Pound, torn into strips|
|Toasted slivered almonds||1⁄2 Cup (8 tbs), toasted lightly|
Puree garlic and almonds, combine with bread and saute in oil until golden.
Add stock, salt and pepper and cook 10 minutes.
Puree and cool.
Add wine, chill and adjust seasonings to taste.
Garnish with melon balls, grapes and ham and pass toasted almonds.
