Fruit Full Pineapple Preserves
|Crushed pineapple||20 Ounce (In Its Own Juice)|
|Apple juice||1 Cup (16 tbs)|
|Jelly mix||1 Teaspoon|
Drain pineapple by pouring contents of can into a strainer set over a large bowl.
With the back of a spoon, push all of the juice out of the pineapple; reserve the pineapple.
Pour pineapple juice into a medium saucepan.
Add the apple juice; bring to the boil and reduce liquid to 1 c. (250 mL).
Remove from heat and add the crushed pineapple and jelling mix.
Stir thoroughly to dissolve jelling mix.
Place pan back over heat and boil for 1 minute.
Pour preserves into a serving dish or clean jars.
