Luncheon Cheese Mold With Fresh Fruit
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Water||3⁄4 Cup (12 tbs)|
|Creamed cottage cheese||16 Ounce (1 Container)|
|Cream cheese||8 Ounce, softened (1 Package)|
|Confectioners sugar||2 Tablespoon|
|Grated lemon peel||3⁄4 Teaspoon|
|Honeydew melon||1 Small, cut into wedges|
|Seedless green grapes||1 Pound|
|Canned salted smoked almonds||6 Ounce (1 Can)|
1. In small saucepan, evenly sprinkle gelatin over water; let stand 1 minute to soften gelatin slightly. Over medium heat, cook, stirring frequently, until gelatin is completely dissolved. Remove saucepan from heat; set aside.
2. Into large bowl, press cottage cheese through fine sieve; add cream cheese, confectioners' sugar, lemon peel, salt, and gelatin mixture; with mixer at medium speed, beat until smooth. Pour mixture into 4-cup mold or bowl; cover and refrigerate until set, about 4 hours.
