Strawberry Whip

Ingredients
  Cold water 1⁄4 Cup (4 tbs)
  Unflavored gelatin 1 Tablespoon
  Fresh strawberries 2 Cup (32 tbs)
  Honey 1⁄4 Cup (4 tbs)
  Lemon extract 1 Teaspoon
  Ice cubes 2
  Heavy cream 1 Cup (16 tbs)
Directions

Pour water into a small saucepan, and sprinkle gelatin on top.
Set aside for 5 minutes to soften.
In a blender, puree strawberries with honey.
Add lemon extract.
Heat gelatin, stirring until dissolved, about 2 minutes.
Remove from heat, and add ice cubes, stirring until melted.
In a large bowl, beat cream until soft peaks form.
Beat in strawberry mixture and gelatin.
Pour into 6 dessert glasses, and refrigerate until set.
Decorate with strawberries, if desired.
