Ingredients
  Hard boiled egg 1
  Italian tomato 1
  Tofu 60 Milliliter, diced (1/4 Cup)
  Tomato juice 30 Milliliter (2 Tablespoon)
  Chopped parsley 2 Teaspoon (10 Milliliter)
  Lettuce leaves 4
  Cottage cheese 125 Milliliter (1/2 Cup)
  Ricotta cheese 125 Milliliter (1/2 Cup)
  Cantaloupe slices 2
  Watermelon slice 1
  Green grapes 2 Ounce (1 Small Cluster)
  Purple grapes 2 Ounce (1 Small Cluster)
Directions

–  Slice hard-boiled egg.
–  Slice tomato without cutting completely to the bottom.
–  Place 1 egg slice between each tomato wedge and set aside.
–  Meanwhile, mix tofu, tomato juice, and parsley in a bowl.
–  Arrange lettuce leaves in a serving dish and place cheese over lettuce. Spread other ingredients over lettuce and cheese in a colorful arrangement.
