Apple And Oat Bran Muffins
|Whole wheat flour||1 1⁄4 Cup (20 tbs)|
|Oat bran||1 Cup (16 tbs)|
|Packed brown sugar||1⁄3 Cup (5.33 tbs)|
|Baking powder||2 1⁄2 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
|Cooking oil||2 Tablespoon|
|Shredded peeled apple||3⁄4 Cup (12 tbs)|
|Nonstick spray coating||1|
In a medium bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
In a small bowl combine buttermilk, egg whites, and oil.
Add to dry ingredients; stir just till moistened.
Stir in shredded apple.
Store batter, tightly covered, in the refrigerator for up to 5 days.
To bake, spray muffin cups with nonstick spray coating.
Spoon about 1/4 cup batter into each muffin cup.
Bake in a 375° oven for 18 to 20 minutes or till a toothpick inserted near the center comes out clean.
