Candied Citrus Peels
|Grapefruit peel/8 oranges/12 limes/12 lemons||4|
|Cold water||1 Cup (16 tbs)|
|Sugar||2 Cup (32 tbs)|
|Water||1 Cup (16 tbs)|
Cut peel into thin strips.
Place in saucepan and cover with cold water; slowly bring to a boil.
Repeat boiling and draining process 5 times.
Make a syrup of 2 cups sugar and 1 cup water.
Boil until syrup is very thick and mostly absorbed.
Spread peels on cake rack to cool.
Roll in additional sugar.
Spread on waxed paper or a cake rack to dry.
