Fruit Stuffed Loin Of Pork

Ingredients
  Lean pork 3 1⁄2 Pound, boneless
  Salt 1 1⁄2 Teaspoon
  Pepper To Taste
  Rosemary 1 1⁄2 Teaspoon
  Crushed pineapple 4 Ounce, drained
  Prunes 8 , finely sliced
  Apple 1 , diced
  Soy sauce 2 Tablespoon (For Basting)
  Baking potatoes 6
Directions

1. Preheat the oven to 400°.
2. Rub the pork with salt, pepper, and rosemary.
3. Roll the pork out flat. Spread the pineapple, prunes, and apple over the meat.
4. Roll the meat together and tie with a string. Insert meat thermometer.
5. Place pork roll on a rack in a baking pan.
6. Bake for 1 1/2 hours or till meat thermometer reads 170°F.
7. Baste with soy sauce every fifteen minutes.
8. Place potatoes in oven 1 hour before cooking time is up.
