Apricot Buttermilk Mold
|Apricots||1 Pound, pitted (About 12 Pieces)|
|Boiling water||1⁄2 Cup (8 tbs)|
|Cold water/Water||1⁄4 Cup (4 tbs)|
|Unflavored gelatin||2 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
|Artificial sweetener||To Taste (Equal 1/4 Cup Sugar)|
|Lemon extract||1⁄2 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
Cook apricots in boiling water in covered saucepan until tender (about 5 minutes).
Drain, reserving cooking liquid.
Pour tea into blender container, sprinkle gelatin over it, and add hot liquid left from cooking apricots.
Run blender to dissolve gelatin.
Add remaining ingredients including cooked apricots.
Blend until fruit is pureed.
Pour evenly into 4 small molds and chill until firm, about 3 hours.
