Dried Fruit Cookies
|Oil||1⁄2 Cup (8 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Eggs||2 , slightly beaten|
|Pure vanilla extract||1 Teaspoon|
|Soy flour||1⁄2 Cup (8 tbs), sifted|
|Oat flour||1⁄2 Cup (8 tbs)|
|Skim milk powder||1⁄2 Cup (8 tbs)|
|Chopped dried fruits||1⁄2 Cup (8 tbs) (Use Dates, Figs, Soaked Apricots, Raisins)|
|Wheat germ||1⁄2 Cup (8 tbs)|
Mix oil and honey until well blended, by beating with a whisk.
Add eggs and vanilla and mix well.
Combine and sift soy flour, oat flour, skim milk powder, and salt.
Add chopped fruit to flour and mix it, separating fruit.
Add wheat germ.
Add flour fruit mixture to wet mixture and stir until combined.
Drop by teaspoonfuls onto lightly oiled cookie sheet.
Bake in preheated oven for 15 minutes.
