Snacking Applesauce Cake Squares

Ingredients
  Butter/Margarine 1⁄3 Cup (5.33 tbs), softened
  Eggs 2
  Frozen unsweetened apple juice concentrate 2⁄3 Cup (10.67 tbs), thawed
  Unsweetened applesauce 1⁄2 Cup (8 tbs)
  All purpose flour 2 Cup (32 tbs)
  Baking powder 2 Teaspoon
  Ground cinnamon 2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt   Teaspoon
  Cooking apple 1 Large, peeled and chopped
  Creamy topping 1 Cup (16 tbs) (Adjust Quantity As Needed)
Directions

Preheat oven to 375°F.
Grease 8- or 9-inch square baking pan.
Beat butter in large bowl until creamy.
Blend in eggs, apple juice concentrate and applesauce.
Combine dry ingredients.
Gradually add to egg mixture, beating until well blended.
Stir in apple.
Spread batter evenly into prepared pan.
Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean.
Cool on wire rack.
Cut into squares; serve warm or at room temperature with Creamy Topping, if desired.
