Summer Fruit Platter
|Fresh pineapple||1 (Whole)|
|Fresh strawberries||4 , sliced|
|Oranges||2 , sliced crosswise|
|Stewed prunes||1 Cup (16 tbs), drained|
|Lime honey dressing/Marshmallow blizzard dressing||1 Cup (16 tbs)|
Halve pineapple lengthwise; remove hard core.
Scoop out fruit and cut into chunks.
Cube apples and pears; toss with pineapple and strawberries.
Pile fruit mixture into pineapple shells.
Arrange on a tray with orange slices, cantaloupe wedges, and prunes.
If desired, garnish with sprigs of mint.
Serve with Lime Honey or Marshmallow Blizzard Dressing.
Lime Honey: Blend together 1/4 cup honey with 2 tablespoons lime juice.
Add dash salt.
Marshmallow Blizzard: To half of 7-ounce jar marshmallow creme, add 1 tablespoon each orange juice and lemon juice.
With electric or rotary beater, beat till very fluffy.
Fold in 1/4 cup mayonnaise or salad dressing.
