Eggs Florentine Ct I Orange
|Chopped onion||1⁄2 Cup (8 tbs)|
|Mushrooms||1⁄4 Pound, cleaned and sliced|
|Frozen chopped spinach||10 Ounce, thawed and drained|
|Orange sections||1 Cup (16 tbs) (Use Florida Variety)|
1. Melt butter in medium saucepan. Add onion and cook until tender; add mushrooms and cook .5 minutes. Stir in spinach, salt, pepper, and orange sections.
2. Divide equally among 4 buttered ramekins or individual shallow baking dishes, making a depression in the center of each.
3. Bake in a 350Â°F oven 15 to 20 minutes, or until hot.
4. Add 1 egg to the depression in each dish; sprinkle with additional salt and pepper. Bake 7 to 10 minutes longer, or until egg white is set.
