Ginger Fruit Gems

Ingredients
  Pitted dates 1 1⁄2 Cup (24 tbs) (375 Milliliter)
  Prunes 1 Cup (16 tbs), cooked and pitted (250 Milliliter)
  Dried apricots 1 Cup (16 tbs) (250 Milliliter)
  Raisins 1 Cup (16 tbs) (250 Milliliter)
  Walnuts 1 Cup (16 tbs) (250 Milliliter)
  Chopped candied ginger 1⁄4 Cup (4 tbs) (50 Milliliter)
  Sugar 1⁄4 Cup (4 tbs) (50 Milliliter)
  Flaked coconut 1 Cup (16 tbs) (250 Milliliter)
Directions

Grind dates, prunes, apricots, raisins and walnuts with coarse blade of food grinder, or chop fruit finely with a knife and crush walnuts with a rolling pin.
Add ginger and sugar; mix well.
Chill 2 to 3 hours.
Form into small balls.
Roll each ball in coconut.
Store in covered container.
