Ginger Fruit Gems
|Pitted dates||1 1⁄2 Cup (24 tbs) (375 Milliliter)|
|Prunes||1 Cup (16 tbs), cooked and pitted (250 Milliliter)|
|Dried apricots||1 Cup (16 tbs) (250 Milliliter)|
|Raisins||1 Cup (16 tbs) (250 Milliliter)|
|Walnuts||1 Cup (16 tbs) (250 Milliliter)|
|Chopped candied ginger||1⁄4 Cup (4 tbs) (50 Milliliter)|
|Sugar||1⁄4 Cup (4 tbs) (50 Milliliter)|
|Flaked coconut||1 Cup (16 tbs) (250 Milliliter)|
Grind dates, prunes, apricots, raisins and walnuts with coarse blade of food grinder, or chop fruit finely with a knife and crush walnuts with a rolling pin.
Add ginger and sugar; mix well.
Chill 2 to 3 hours.
Form into small balls.
Roll each ball in coconut.
Store in covered container.
