Orange Bran Bread
|All purpose flour||2 1⁄4 Cup (36 tbs)|
|Bran cereal||1⁄2 Cup (8 tbs)|
|Baking powder||4 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Firmly packed light brown sugar||1 1⁄4 Cup (20 tbs)|
|Honey||1⁄4 Cup (4 tbs)|
|Raisins||1⁄2 Cup (8 tbs), plumped and chopped|
|Orange||1 Medium, pared remove white membrane and pulp diced|
|Grated lemon peel||1 Teaspoon|
|Lemon juice||1 Tablespoon|
|Milk||1 Cup (16 tbs)|
|Egg||1 , beaten|
Mix flour, cereal, baking powder, baking soda, and salt thoroughly; set aside.
Combine the brown sugar, honey, and butter in a large saucepan.
Bring to boiling; boil 1 to 2 minutes to dissolve the sugar, stirring constantly.
Remove from heat and cool slightly.
Stir in the raisins, orange pieces, lemon peel and juice, milk, and egg.
Add dry ingredients to the fruit mixture all at one time and stir only enough to moisten dry ingredients.
Turn into 2 greased 8x4x2-inch loaf pans and spread evenly.
Bake at 350°F about 30 minutes, or until bread tests done.
Remove bread to wire racks and cool 10 minutes in pans.
Remove from pans to racks and cool completely.
