I enjoy my fudge the best with this extremely delicious Potato Fudge Frosting! Yes, a great and delicious blend of mashed potatoes and chocolate in vanilla flavoring, this Potato Fudge Frosting is a great way to treat your desserts! Give it a try; it is tasty and easy too!
Ingredients
  Instant mashed potatoes 2 Cup (32 tbs)
  Milk 1⁄4 Cup (4 tbs)
  Butter/Margarine 1⁄2 Cup (8 tbs)
  Unsweetened chocolate 3 Ounce (About 3 Square)
  Salt 1⁄8 Teaspoon
  Vanilla extract 2 Teaspoon
  Confectioner's sugar 4 1⁄2 Cup (72 tbs)
Directions

Prepare 1/2 cup lightly packed riced or sieved potato from instant mashed potatoes according to package directions, using only the water (omit milk, butter, and seasonings).
Blend potato with the 1/4 cup milk; set aside.
Heat butter in a saucepan over low heat until lightly browned.
Add chocolate and stir just until melted; remove from heat.
Add potatoes, salt, and extract and beat until well blended.
Alternately add confectioners' sugar and 1/4 cup milk, beating well after each addition.
