Fluffy White Frosting
|Sugar||1⁄2 Cup (8 tbs)|
|Light corn syrup||1⁄4 Cup (4 tbs)|
|Egg whites||2 (1/4 cup)|
Mix sugar, corn syrup and water in small saucepan.
Cover tightly; heat over medium heat until mixture boils vigorously.
Uncover; boil rapidly, without stirring, to 242Â° on candy thermometer or (until small amount of mixture spins a 6 to 8 inch thread when dropped from spoon).
While mixture boils, beat egg whites until stiff peaks form.
Pour hot syrup very slowly in a thin stream into the beaten egg whites, beating constantly on medium speed.
Beat on high speed until stiff peaks form, adding vanilla during last minute of beating.
