|White sugar||160 Gram|
|Water||1⁄3 Cup (5.33 tbs)|
|Corn syrup||1 Tablespoon|
|Chopped candied pineapple||1⁄3 Cup (5.33 tbs)|
|Finely chopped candied cherries||1⁄3 Cup (5.33 tbs)|
|Rum extract||1⁄2 Teaspoon|
Cook sugar, water and syrup to soft-ball stage (236Â°F.).
Beat egg whites and salt slowly until stiff, and pour sugar syrup over them, beating constantly.
Continue beating until mixture is of spreading consistency; then fold in fruits and rum extract.
Makes enough to fill and frost a 9-inch layer cake.
