In this video, Betty demonstrates how to make Cream Cheese Frosting for Happy Mother's Day Hummingbird Cake. This is a standard amount of frosting for a three-layer cake; you may make 1 ½ times the recipe or a double-recipe of frosting, if you like it particularly thick between the layers and on top.
Ingredients
  Cream cheese 8 Ounce, softened
  Butter 1⁄2 Cup (8 tbs), softened (1 stick)
  Confectioners sugar 16 Ounce (powdered sugar or icing sugar)
  Vanilla 1 Teaspoon
Directions

MAKING
1. In a large mixing bowl, combine softened cream cheese, butter, and vanilla. Beat with an electric mixer until smooth.
2. Gradually add confectioner's sugar and beat after each addition until light and fluffy.
3. Spread frosting between layers, around sides, and on the top of a three-layer cake.

SERVING
4. Serve the cake and enjoy!

TIPS
This frosting can be used for Hummingbird Cake, Red Velvet Cake, Carrot Cake, and others. It is always great on cupcakes, too.
