|Sugar||1 1⁄2 Cup (24 tbs)|
|Cream of tartar||1⁄2 Teaspoon|
|Lemon peel||1 Teaspoon|
|Water||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Tablespoon|
|Pure vanilla extract||1 Teaspoon|
1 In top of double boiler, mix egg whites, sugar, cream of tartar, lemon peel, salt and water.
2 With electric mixer or rotary beater, beat for about 1 minute
3 Add in lemon juice and cook over boiling water, beating constantly, for 7 minutes or until peaks form.
4 Remove from the heat and stir in vanilla along with a few drops food color.
5 Beat thoroughly until the mixture reaches spreading consistency.
5 Serve as desired.
