Light Fudge Frosting
|Sugar||2 Cup (32 tbs)|
|Light corn syrup||1⁄4 Cup (4 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Shortening||1⁄2 Cup (8 tbs)|
|Unsweetened chocolate||2 Ounce|
|Vanilla extract||1 Teaspoon|
Combine all ingredients except vanilla in a medium saucepan.
Stir constantly over medium heat until chocolate melts and sugar dissolves.
Bring to a boil, stirring constantly.
Boil rapidly, still stirring constantly, 1 minute or until mixture reaches 220°F (105°C) on a candy thermometer.
Remove from heat; stir in vanilla.
Place pan in a bowl of ice water to cool slightly, about 5 minutes.
Beat until frosting loses its gloss and is spreadable, about 10 minutes.
Fills and frosts one 2-layer, 8- or 9-inch cake.
