Quick Fudge Frosting
|Unsweetened chocolate||2 Ounce|
|Butter/Regular margarine||1⁄4 Cup (4 tbs)|
|Confectioners sugar||3 Cup (48 tbs)|
|Light cream/Evaporated milk, undiluted||1⁄4 Cup (4 tbs)|
|Vanilla extract/1/2 teaspoon rum extract||1 Teaspoon|
Melt chocolate over hot water.
Remove from heat; let cool.
In medium bowl, combine butter, sugar, salt, and 3 tablespoons hot cream.
With wooden spoon, or portable electric mixer at medium speed, beat until mixture is smooth.
Add chocolate; continue beating until frosting is thick enough to spread.
If frosting seems too thick, gradually beat in a little more hot cream.
Makes enough to fill and frost an 8-inch or 9-inch
