Yellow Jacket Frosting
|Sugar||1 2⁄3 Cup (26.67 tbs)|
|Light corn syrup||3 Tablespoon|
|Water||1⁄2 Cup (8 tbs)|
|Grated orange rind||1⁄2 Tablespoon (From 1/2 Fruit)|
|Grated lemon rind||1⁄2 Teaspoon (From 1/2 Fruit)|
|Fresh lemon juice||1 Teaspoon|
In saucepan mix sugar, corn syrup, and water.
Cook without stirring until 250°F.registers on candy thermometer, or until a small amount of mixture dropped into cold water forms a hard ball.
Beat egg yolks with salt until thick and lemon-colored.
Gradually add syrup and beat until thick and of spreading consistency.
Stir in grated rinds and juice.
