Maple Fudge Frosting
|Sugar||2 1⁄2 Cup (40 tbs)|
|Maple syrup||1 Cup (16 tbs)|
|Light cream/Evaporated milk||1 Cup (16 tbs)|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
1. Combine the sugar, maple syrup and cream in a saucepan; bring to a boil, stirring constantly. Cover the saucepan and boil 3 minutes without stirring. Remove the cover and continue boiling until the mixture forms a soft ball when a little is dropped into a cup of cold water, 238° F.; stir constantly.
2. Remove from the heat. Stir in the salt and vanilla. Let the mixture cool to lukewarm, 110° F.
3. Beat until the icing is stiff enough to spread; fold in the nuts. If the icing hardens while spreading, place the bowl over hot water to keep it soft enough.
