Four Minute Snow Frosting
|Egg white||1 , unbeaten|
|Granulated sugar||3⁄4 Cup (12 tbs)|
|White corn syrup||3⁄4 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
Combine first 4 ingredients in top of small double boiler and beat with a hand beater until well mixed.
Place over rapidly boiling water and beat constantly with hand beater for 4 min., or until icing will stand in peaks at end of beater.
Remove, add vanilla, and beat until of spreading consistency.
Frosts an 8" x 8" x 2" cake or frosts tops and sides of two 8" layers.
If desired, 2 sq (2 oz.) chocolate melted with 2 teasp butter may be poured over top of icing after it has partially set.
