Double Boiler Frosting

Ingredients
  Egg whites 2 (Unbeaten)
  Granulated sugar 1 1⁄2 Cup (24 tbs)
  Water 5 Tablespoon
  White corn syrup/1/8 teaspoon cream of tartar 1 1⁄2 Teaspoon
  Vanilla extract 1 Teaspoon
Directions

Combine egg whites, sugar, water, and corn syrup in top of double boiler, beating with a hand beater until thoroughly mixed.
Place over rapidly boiling water and beat constantly with hand beater, cooking for 7 min., or until icing stands in a peak on beater.
Remove from boiling, water, add vanilla, and beat until thick enough to spread.
Frosts tops and sides of two or three 9" layers or three 8" layers, or frosts an 8" x 8" x 2" cake generously.
Moist shredded coconut, fresh or canned, may be sprinkled over filling and top icing.
