White Chocolate Frosting
|White chocolate bar||9 Ounce (3 Bars, 3 Ounce Each)|
|Cream cheese||12 Ounce (At Room Temperature)|
|Unsalted butter||1⁄2 Cup (8 tbs) (At Room Temperature)|
|Strained fresh lemon juice||1 Tablespoon|
In a small heavy saucepan, melt chocolate over very low heat. Do not allow any moisture to touch chocolate. Stir occasionally until chocolate has softened. Set aside.
Beat cream cheese and butter together in a medium-sized mixing bowl. Gradually add white chocolate and lemon juice, beating until smooth. Chill briefly, if needed, to reach spreading consistency.
Spread frosting on cake. Chill to set.
