Coconut Pecan Frosting
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Evaporated milk||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Flaked coconut||1 1⁄3 Cup (21.33 tbs)|
|Pecans||1 Cup (16 tbs), chopped|
1. Place butter in 1 1/2 -quart casserole. Heat on Full Power for 1 to 2 minutes, or until melted.
2. Add milk, sugar, egg yolks, and vanilla. Cook on Full Power for 4 1/2 to 6 1/2 minutes, or until thickened. Stir occasionally during cooking time.
3. Add coconut and pecans. Stir until cooled and of spreading consistency.
