White Chocolate Frosting

Ingredients
  Powdered sugar 3 Cup (48 tbs), sifted
  Cream cheese 3 Ounce, softened
  Half and half 3 Tablespoon
  Vanilla 2 Teaspoon
  Salt 1⁄8 Teaspoon
  White chocolate 4 Ounce (sweet)
  Butter 2 Tablespoon
Directions

In mixer, blend sifted powdered sugar, cream cheese, half and half, vanilla and salt.
In double boiler, melt white chocolate with butter over 1-inch simmering water.
Add to creamed mixture.
Beat until smooth.
Spread on Gold Rush Carrot Cake.
For Bundt Cake less frosting is needed.
Refrigerate left-over frosting for cookies, fruit cake or steamed pudding.
