Simple Lemon Frosting

Ingredients
  Soft butter 1⁄4 Cup (4 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
  Cream 1 Tablespoon
  Lemon rind 1⁄4 Teaspoon, grated
  Sugar 3 1⁄2 Cup (56 tbs), firmly packed
Directions

Put first 4 ingredients into mixing bowl and stir to blend.
Stir in sugar gradually until a velvet-smooth, spreading consistency is obtained.
Enough for 3 layer cake or 3 dozen cup cakes.
