Seven Minute Frosting
|Sugar||1 1⁄2 Cup (24 tbs)|
|Light corn syrup/1/4 teaspoon cream of tartar||2 Teaspoon|
|Cold water||1⁄3 Cup (5.33 tbs)|
In top of double boiler combine sugar, egg whites, corn syrup or cream of tartar, and salt.
Add cold water.
Beat 1/2 minute at low speed of electric mixer to blend.
Place over boiling water (water in bottom of double boiler should not touch top pan).
Beating constantly with electric mixer on high setting, cook till frosting forms stiff peaks, about 7 minutes.
Remove from heat; add vanilla.
Beat till of spreading consistency and satiny in appearance, 2 to 3 minutes more.
Frosts tops and sides of two 8- or 9-inch layers, or one 10-inch tube cake.
