Coconut Pecan Frosting
|Light cream/Milk / half and half||1 Cup (16 tbs)|
|Honey||1⁄2 Cup (8 tbs), warmed|
|Egg yolks||3 , lightly beaten|
|Butter||1⁄2 Cup (8 tbs)|
|Grated unsweetened coconut||1 1⁄3 Cup (21.33 tbs)|
|Chopped pecans||1 Cup (16 tbs)|
Combine milk, honey, egg yolks, butter, and vanilla in a saucepan.
Stir over low heat until thickened, about 12 minutes.
Remove from heat and beat until cool and thick enough to spread.
Stir in coconut and nuts.
