Peach Melba Frosting
|Unflavored gelatin||1 Teaspoon|
|Cold water||2 Teaspoon|
|Granulated fructose||2 Teaspoon|
|Non dairy whipped topping||5 1⁄5 Ounce (1 Envelope)|
|Skim milk||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|Fresh peaches||3 , peeled and pureed|
|Fresh raspberries||1 Cup (16 tbs)|
Sprinkle gelatin over cold water in a small saucepan.
Allow to soften for 1 minute.
Stir over low heat until gelatin is dissolved.
Stir in fructose until dissolved.
Remove from heat and allow to cool to lukewarm.
Combine nondairy topping powder and skim milk in a large, preferably narrow, bowl.
Whip into soft peaks.
Slowly beat in vanilla, lukewarm gelatin mixture, and peach puree.
Beat to stiff peaks.
Fold in raspberries.
