Yumm, I love this Coconut Pecan Filling And Frosting. Coconut Pecan Filling And Frosting is a family favorite any time of the year when it comes to frosting for cakes. Turns out to be a hit everywhere!
Ingredients
  Evaporated milk/Heavy cream 1 Cup (16 tbs)
  Sugar 1 Cup (16 tbs)
  Egg yolks 3 , slightly beaten
  Butter/Margarine 1⁄2 Cup (8 tbs)
  Vanilla 1 Teaspoon
  Angel flake coconut/Premium shred coconut 1 1⁄3 Cup (21.33 tbs) (Baker's Brand)
  Chopped pecans 1 Cup (16 tbs), chopped
Directions

Combine milk, sugar, egg yolks, butter and vanilla in a saucepan.
Cook over medium heat, stirring constantly until mixture thickens, about 12 minutes.
Remove from heat.
Add coconut and pecans.
Cool until of spreading consistency, beating occasionally.
