Yule Log Frosting
|Unsweetened chocolate square||2 Ounce (Two 1 Ounce Squares)|
|Semi-sweet chocolate square||1 Ounce (1 Square)|
|Whipping cream||6 Tablespoon (1/4 Cup Plus 2 Tablespoons)|
|Instant coffee granules||1 1⁄2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Unsalted butter||1 Cup (16 tbs), softened|
Place chocolates in top of a double boiler; bring water to a boil.
Reduce heat to low; cook until chocolate melts, stirring occasionally.
Remove from heat.
Combine egg yolks and whipping cream in a heavy saucepan.
Cook over low heat, stirring constantly, until mixture reaches 160°.
Remove from heat, and chill.
Combine coffee granules, sugar, and water in a large saucepan.
Bring to a boil; cook over medium heat until mixture reaches soft ball stage (240°).
Beat egg yolk mixture at high speed of an electric mixer until thick and lemon colored; continue beating, slowly adding hot syrup.
Continue beating until mixture thickens and cools.
Add butter, 2 tablespoons at a time, beating until smooth.
Stir in chocolate and Kahlua.
Chill 30 minutes.
