Vanilla Flavored Caramel Frosting
|Light brown sugar||3 Cup (48 tbs), packed|
|Light cream||1 Cup (16 tbs)|
|Butter||1⁄3 Cup (5.33 tbs)|
|Vanilla extract||1 Teaspoon|
1. Cook the sugar, cream and salt, stirring, until the sugar dissolves. Continue cooking to 234° F. (the syrup forms a very soft ball in cold water).
2. Remove from the heat, add the butter and cool without stirring until the bottom of the saucepan feels lukewarm.
3. Add the vanilla and beat until the frosting is creamy and barely holds its shape. Spread quickly on the cake before the frosting hardens.
