Fluffy Marshmallow Frosting
|Sugar||1 1⁄2 Cup (24 tbs)|
|Light corn syrup||5 Teaspoon (1 tablespoon plus 2 teaspoons)|
|Water||1⁄3 Cup (5.33 tbs)|
|Marshmallows||16 Large, quartered|
Combine egg whites (at room temperature), sugar, corn syrup, and water in top of a double boiler; beat 1 minute at high speed of an electric mixer.
Place over boiling water and beat at high speed 7 minutes.
Remove from heat; transfer to a large mixing bowl.
Add marshmallows; beat until spreading consistency.
Decorate on cake or cupcake
