Tangy Lemon Frosting
|Confectioners sugar||3 Cup (48 tbs)|
|Vegetable shortening||1⁄4 Cup (4 tbs)|
|Grated lemon peel||1 Tablespoon|
|Yellow food coloring||10 Drop|
|Lemon juice||1 Tablespoon|
Combine 1 cup of the sugar, the vegetable shortening, lemon peel, salt, and food coloring.
Add water and lemon juice alternately with remaining sugar; mix until smooth and creamy.
Add more sugar to thicken or water to thin if needed for good spreading consistency.
Frosts tops and sides of two 8 or 9 inch cake layers.
