Buttermilk Fudge Frosting
|Butter||3⁄4 Cup (12 tbs)|
|Buttermilk||1 Cup (16 tbs)|
|Sugar||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
|Vanilla extract||1 Teaspoon|
Put the butter, buttermilk, sugar, and baking soda into a heavy 3 quart saucepan.
Stir over low heat until sugar is completely dissolved.
Increase heat and bring mixture to boiling.
Set candy thermometer in place.
Cook, stirring constantly, until thermometer registers 232Â°F.
Remove from heat and put the 2 tablespoons butter on top of frosting.
Set frosting aside to cool to 110Â°F.
Do not disturb during cooling.
When cool, stir in extract and beat until creamy and of spreading consistency.
If frosting becomes too thick to spread smoothly, add a few drops of hot water.
