Fritter

 

Fritter is a deep fried snack which is battered. They can either be sweet with fruit or nut fillings or savoury with cheese, meat, fish or vegetable filling. Plain fritters can also be made. They are crispy on the top. The color ranges from golden to brown. The word is derived from the Latin word 'frigere' which means to fry. It is a dessert or a snack.

Ingredients and Preparation

 

Any vegetable, meat, fish or fruit can be used as the filling. The fritter batter is made of refined flour, water, salt and sugar.

 Fruits and vegetables are sliced, dipped into the batter and fried in hot oil. Sliced meats and small fillets of fish can be used as well. Chopped vegetables can be added to the batter itself and fried.

Plain fritters were made by frying chou dough or doughnut dough.

 

 

Serving

 

Fritters can be served with any condiment as per the filling. Eg. Fruit fritters can be served with a sweet compote or preserve. Savoury fritters can be served with ketchup, sauces or a dip.

In India, fritters are enjoyed during the rains along with tea.

 

 

Popular Variations

 

·         Japanese snack tempura is similar to fritters. They generally use shrimps and other fishes.

·         In India, pakoras are made with gram flour batter. Banana, potato, onion, cauliflower, spinach, aubergines and cottage cheese are used. Mixed pulse and lentil flour can also be used to make plain pakoras.

·         In U.S., beignets are made by deep frying dough. It is similar to doughnuts.

·         In Italy, fritto misto is made by frying small pieces of meats, vegetables, fruits and seafoods in olive oil.
