1.Cook the fish and mash them.
2.Beat the yolks of the eggs until light and thick then add, little by little, the flour, salt, pepper, the minced garlic and parsley, and the fish.
3.Lastly add the whites of the eggs beaten to a froth.
4.Drop spoonfuls of this mixture into hot fat (360Â°-370Â° F.) and fry to a golden brown.
5.Serve with a sauce of your choice
