Bite-Size Apple fritters
Add 1/8 teaspoon cinnamon to fritter batter for fruits .
Heat oil as directed for banana fritters.
Cut 4 to 5 small, peeled, and cored apples crosswise into 1/2 inch thick slices.
Cut slices into thirds or quarters.
To keep apple pieces from darkening, drizzle 1 tablespoon lemon juice over apples; mix.
Spear an apple piece with a long-handled fondue fork.
Dip into batter; drain well.
Hold in hot oil until golden brown on all sides, 1 1/2 to 2 minutes.
Cool slightly; dip in confectioners' or cinnamon sugar.
Remove from fork, eat and fry another.
