Peppered Corn Fritters
|Fresh corn/Frozen, thawed||1 1⁄4 Cup (20 tbs)|
|Chopped red bell pepper||1 Cup (16 tbs)|
|Finely chopped green onions||1 Cup (16 tbs)|
|Flour||1 1⁄4 Cup (20 tbs)|
|Baking powder||2 Teaspoon|
|Black pepper||1⁄8 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Vegetable oil||4 Tablespoon|
Combine the corn, red pepper and green onions in a bowl and mix well.
Combine the next 5 ingredients in a separate bowl and mix well.
Stir the flour mixture into the corn mixture.
Add the milk gradually, stirring until moistened.
Heat 2 tablespoons vegetable oil in a skillet over medium high heat.
Drop the batter by 1/4 cups in the skillet.
Cook for 2 minutes on each side or until golden brown, adding more vegetable oil as needed.
