|All purpose flour||3⁄4 Cup (12 tbs)|
|Baking powder||1 Teaspoon|
|Eggs||2 , beaten|
Combine corn and water in a medium saucepan.
Bring to a boil, cover, reduce heat, and simmer 7 to 8 minutes or just until corn is tender.
Combine flour, baking powder, salt, and pepper in a large mixing bowl, set mixture aside.
Combine eggs and corn, blend corn mixture into flour mixture, stirring just until moistened.
Drop by tablespoonfuls into 3/4 inch of hot oil (375Â°).
Fry for 45 seconds on each side.
Drain well on paper towels.
