Golden Pineapple Fritters
|Pineapple||2 Can (20 oz)|
|Fat||2 Cup (32 tbs) (for deep frying)|
|Enriched flour||1 1⁄2 Cup (24 tbs), sifted|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Baking powder||3 Teaspoon|
|Salt||1 1⁄2 Teaspoon|
|Eggs||2 , beaten|
|Salad oil||1 Tablespoon|
|Sweetened whipped cream||1 Cup (16 tbs)|
Drain pineapple, reserving 1/3 cup syrup.
Place spears on paper towels to dry.
Sift together 1 1/2 cups flour, the sugar, baking powder, and salt.
Combine eggs, reserved 1/3 cup pineapple syrup and the salad oil; add to dry ingredients, stirring just till smooth.
Roll pineapple spears in flour; spread with batter.
Fry a few at a time, in deep hot fat or oil (375Â°), about 1 minute on each side, or till golden brown.
Drain on paper towels. (Fritters stay crisp 15 to 20 minutes keep hot in slow oven.)
Serve warm, topped with sweetened whipped cream sprinkled with nutmeg.
