|Whole wheat flour||1 1⁄4 Cup (20 tbs)|

|Apple||2 , seeded, cored, cut into 1 inch strips|
|Bananas||2 , cut into diagonal pieces|
|Cooking oil||2 Cup (32 tbs) (For Deep Fat Frying)|
|All-purpose flour||1 Tablespoon (For Coating)|
|Sugar||1 Dash (For Garnishing)|
|Cinnamon||1 Dash (For Garnishing)|
Combine flour, salt, and yeast in a small bowl.
Add oil and water, and stir to combine.
Let rise 20 minutes.
The mixture should resemble thick cream.
When ready to use, whip the egg white until stiff, and fold in gently.
Thin with milk if necessary.
Peel and core apples, and slice into 1/2 inch rings.
Peel and slice bananas into four or five diagonal pieces.
Heat deepfat cooking oil to 375Â° F.
Lightly coat fruit with allpurpose flour.
Dip in batter, and fry until golden brown.
Sprinkle with sugar or a mixture of cinnamon and sugar.
Note: This batter may also be used to coat fish fillets, shrimp, and vegetables.
When preparing fish, salt and pepper fillets lightly before dipping in flour and batter.
Vegetables typically used for fritters are onion rings, cooked yam chunks, and green peppers.
