|Eggs/2 small eggs||1 Large|
|Milk||1⁄2 Cup (8 tbs)|
|Whole wheat flour||2 Cup (32 tbs)|
|Fresh corn/Canned corn||2 Cup (32 tbs), drained|
|Salt||1 1⁄2 Teaspoon|
|Baking powder||2 Teaspoon|
|Cooking oil||2 Cup (32 tbs) (For Frying)|
Beat eggs, and stir in flour and milk.
Add remaining ingredients, and blend.
Spoon heaping tablespoons of batter into hot, 375°F cooking oil, and cook until browned, turning once.
Drain on paper toweling, and serve hot with maple syrup, if desired.
