Munchy Corn Fritters

Enjoy these crispy and light Corn Frittters as an afternoon snack or when you want to satiate that in-between meals hunger pang! I love my Corn Fritters with savory tomato sauce! What about you?
Ingredients
  Eggs 2
  Corn on the cob 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Flour 1⁄4 Cup (4 tbs)
  Shortening 1⁄4 Cup (4 tbs)
Directions

Separate egg yolks from whites, beat whites stiff.
Put corn in a mixing bowl.
Add beaten egg yolks, salt, pepper, and flour.
Mix well with a wooden spoon or rubber spatula.
Gently fold in beaten egg whites.
Heat shortening.
Drop fritters by spoonfuls into hot fat.
When browned on both sides, drain on paper towels, then put onto a heated platter.
Serve as part of a brunch buffet.
